To delete songs off your iPhone that have been downloaded, you can swipe to the left and tap delete. Keep in mind that if you have the option to Show all Music on, then the songs will still show up but will have an iCloud icon next to it then that means that they are not stored on your iPhone. Glad that I could be of some help. If you do not want to see the cloud purchases, you can turn those off by going to Settings > iTunes & App Store and toggle off Show All Music.
