Having some mouse connection issues...
I've tried 3 different Magic Mice,
and ALL are having the same issue with my MacBook Pro. (Yosemite 10.10.2)
Its as if there is a delay or lag in the signal, so the mouse glitches and hesitates,
making it extremely difficult (and frustrating) to perform simple tasks.
Does anyone have a similar experience or know of a fix?

No not really... only my iPhone, and its not really connecting to anything via Bluetooth.
The only other bluetooth in very close proximity is my wireless keyboard.
(There are also other Apple wireless mice and keyboards in the office..)
Could the other Apple products (especially my wireless keyboard) be causing this?
I ask because I've since found that I only have this issue when I'm plugged in at the office – not at home,
and at home I'm hooked up to a wire connected Apple keyboard.
There are Bluetooth phones in the office, not near me... maybe they are causing it?
Kind of odd though, because its only happening on my Macbook Pro, not the other Macs.
Could there be something wrong with my Bluetooth hardware?
Any advice or thoughts would be greatly appreciated.

Anything is possible 😉, but I doubt if other BT devices would cause a problem.
The only thing I can think of to suggest is to reset both the PRAM and SMC on your MacBook Pro.

It sounds like you are having a very frustrating issue with your MacBook Pro not responding to your Magic Mouse promptly. I would suggest that you troubleshoot using the steps in this article -

Start with the section titled Keyboard or mouse intermittently stops responding and then go on to Mouse does not track as expected (jittery, jumpy, slow, fast).
