I am living in Japan and ordered a new macbook.
I made sure I got the US keyboard but am wondering what this Country Kit-JPN is and if I should try to change it to US or something???

Don’t worry. The Country kit - JPN means you will be getting a US KEYBOARD along with a User’s guide in Japanese and a Japanese plug socket compatible macbook charger.

My situation is similar except I noticed mine says: KEYBOARD/USER's GUIDE-JPA
There's no US before keyboard, though I'm almost positive I ordered the US keyboard. Should I be concerned? It also says Country Kit Japan.
