Which photobook theme in iPhoto has the most text boxes

I'm using iPhoto 9.6.1 and want at least one text box on each page with several pictures. For my next book - a family history - I'd even like to make some 2-column text boxes with text flowing from one to the other. Is this possible in iPhoto? It seems from my research that choosing the correct theme is the key, but do I have to experiment with each one? Can I customize any of the layouts? Can I simply ADD a text box or enlarge the little caption boxes they offer?
