Table Moves to Next Page When Too Big
When I create a table, and it reaches a certain length, it moves to the next page, leaving a big white space. How to I stop this?

I am not sure why a "soft return" to create a line break solves this issue of tables jumping to the start of the next page, but this approach certainly worked for me. Prior to reading your fix, the only other thing that worked for me to work around the table jump issue was to insert a one row table and leave it empty and then insert my lengthy table after.
Bad behavior is caused by checked option "Prevent widow & orphan lines".
When this option is UNCHECKED tables works as expected but if it is checked you need insert Shift+Enter before table.
