how do you delete music on your iphone using iTunes

Hi,

Certain songs / album I am not able to delete from my iPhone using 'swipe to left' and 'press delete', as I don't get that option on them !

So I am wondering is there a method where in when I connect my iPhone to mac/iTunes then I am able to delete all unwanted music?

Also certain music when I delete from iPhone and whenever I sync the phone next then that previously deleted music appears again, it's not even in selected playlist I am syncing on to iPhone....

Similarly, can unwanted photos be deleted from iPhone using 'photos' on macbook....?

Sorry for my ignorance, will appreciate any help / advice in this regard, thanks.
