I have a iPod Touch 2nd Generation 32GB - and it is has IOS 5.1.1 (model MC)
How do I upgrade to the latest IOS 8 ?
Please can someone send me links to upgrade? Where do I find this?
I think I realize that the latest version is 6, but how do I upgrade to that > especially I want latest version.

In doing searches in Google> there are ways to upgrade to the latest version IOS 8 > Can anyone please tell me how / provide specifics?

No, as previously stated, you have a 3rd generation iPod Touch. It can NOT be upgraded beyond 5.1.1.

The fact that the iPod is running iOS 5.1.1 rules any chance that it is a 2nd generation, as that model can not be upgraded beyond 4.2.1.

If you still have the box or receipt, the model number beginning with A should be on there. Otherwise, the fact that it is running iOS 5.1.1 proves that it is a 3rd generation because the 2nd generation maxes out at iOS 4.2.1, as others have pointed out.
Also, you haven't mentioned why you are interested in iOS 8, is there an app you want to download that requires iOS 8? If so, see App Store: Downloading Older Versions of Apps. You can also find apps that are compatible with iOS 5.1.1 using: Find iOS Apps Compatible with Older Devices.
