Setup your new iPhone 6 as a new phone and then update it to iOS 8.3. Next put the iPhone 6 back into Setup mode by choosing Settings > General > Reset > Erase All Content and Settings. Now go through the setup and you will be able to restore to the iPhone 5 backup.

Thanks Jim, I'll try this. Does it matter that I'm using the old sim from my iPhone 5 when I do this? I just want to be sure I won't be erasing anything from the sim card in the process!

Trying to download the backed up data from my iPhone 5 to new iPhone 6 but it won't let me as the new iPhone doesn't have iOS 8.3. I presume new phone only has iOS 8.2 but it won't let me update it at the point of set up. Any suggestions?
