How do I update my iPad 2 to the newest available software?
I have plugged my iPad into my iTunes and it said it was updating, but it was trying to update to iOS 8.3. I only get iOS 6 (I think). Please help!!!

If you do not have a Software Update option present on your iDevice, then you are trying to upgrade to iOS 5 or higher. You will have to connect your device to your computer and open iTunes in order to upgrade.

Tap Settings > General > Software Update
If an update is available there will be an active Update button. If you are current,
then you will see a gray screen with a message saying your are up to date.
b. If you are still using iOS 4 — Updating your device to iOS 5 or later.

I take it that you are trying to do the upgrade Over The Air. If all fails and the device cannot conclude the process, you may have better results using iTunes on a computer instead.
Note also that since you're coming from iOS 4, the process requires downloading the full iOS 8 installer instead of a smaller delta installer (like that used with a minor .x to .x+1 update). We're talking about at least 1GB. It will take time and you will need at least around 5GB free on the device if you do it OTA, or less if you do it with iTunes and a computer.
