Since the latest update 3 days ago--is it 8.1.3? Everything works very jerky, web pages won't load, keys don't respond well to type in addresses, etc. very annoying.

I suggest that you try a reset. Press both Home and On/off buttons, ignore the off slider, until you see the Apple logo. Then release the buttons and the device will reset. You will not lose any data.
