I need to set up my replacement phone as a new phone so it won't copy everything. But I want to be sure it is all saved somewhere.

I got a reconditioned iphone 5 from ATT warranty. I had too much stuff on my old iphone, videos, apps, etc. So I want to essentially start over but I don't want to lose all of that. I know the apps will still be in iTunes and I can selectively add them back wirelessly. But what about my videos and photos? They will still be saved in iTunes and iPhoto won't they? What about when wipe everything off the old iphone to send it back? Also, how can I backup the photos and videos onto an external harddrive? I think that this used to be done automatically but I am not sure if it is doing it anymore or how to check.

Let's see if we can square this away for you. With backing up your iPhone, it will back everything you have using iTunes and if you use iCloud, by default, backs up everything. After you have made a backup you can restore that to put the contents of the backup on your replacement iPhone. If you want to put certain things back on, you will at least need to export the content to your computer, like your photos and videos. If you only want to put certain things back on, then you will need to sync that over with iTunes. All the information you will need are in the articles below.
