I understand how much of an inconvenience it can be to have such an importan app misbehave in an odd manner. Removing and readding your email accounts may help stabilize the Mail app.
- Tap Settings > Mail, Contacts, Calendars.
- Tap the affected email account.
- Tap Delete Account.
- Add your account again.
