I've tried to erase the content on my phone and re-sync with no success. I've also tried to manually sync the albums I'm missing and when I go to sync, the screen says it is copying but then it isn't on my phone. Any suggestions??

It sounds like you've used the Settings on your phone to erase the content and settings on your device and you still have albums and songs that dont sync either automitcally or manually. I would next restore it with iTunes as a new device, and then try the sync again:
Use iTunes to restore your iPhone, iPad, or iPod to factory settings
