This will switch your watch back to calories.
My best guess is that Apple may have messed up presets for the Australian region & accidentally set it for kilojoules.
A specific menu to change this would leave room for everyone to make their own choice.
I'm sure they'll fix that soon.
watchOS 2.1 perhaps.

Jan 24, 2016 7:35 AM in response to mrjoshevansby yohst,Go to Watch App>My Watch>General>Language & Region>Region Format. If it is set incorrectly, set to to your country. If it is already set to your country, change it, wait until you see the effect on your watch, then change it back to your country. Give it a few sec to update on your watch.

How to change activity back to calories from kilojoules after upgraded to OS 2.0
1. On your watch, click once on the Digital Crown to go to the home screen,
2. Tap the Workout app to open it and select to start an Outdoor Run.
3. When the screen is displaying the goal, go to configure the kilojoules goal option by swiping left or right side, and then force press on the screen.
4. Press cancel button to go back one screen and then press the Digital Crown to exit from the Workout app.
5. Now you should notice that the Activity app show calories and the Workout app is also for future workouts.

You can find that here:
" Change the units of measurement. While viewing the distance or calorie goal screen, firmly press the display, then tap MI or KM to select miles or kilometers, or CAL or KJ to select calories or kilojoules. "
