None of my apps can access camera or photos. I went to Settings-->Privacy-->Photos, but none of the apps are showing up as requesting access. This just happened all of a sudden. Help!

As I understand it you none of your apps can access your camera, and they are not listed in your Privacy settings. I would check to see if restrictions are enabled on your phone first:
About Restrictions (parental controls) on iPhone, iPad, and iPod touch
If not then I would next quit all the running apps on your phone:
Double-click the Home button.
Swipe left or right until you have located the app you wish to close.
Swipe the app up to close it.
When you have done that restart the device and test the issue again:
iOS: Turning off and on (restarting) and resetting
