I noticed iMovie events can hold more than one movie - so I thought about using this feature to work on my vacation video:
1. Create one event for the vacation
2. Create separate movie for each day of the vacation
3. Merge all movies to one final movie and export
I was able to deal with steps 1-2 but couldn't find a way to do 3.
Am I missing something?

This is what I frequently do. To 'merge the movies within iMovie you have to Edit - Select-All from the second movie and paste it to the end of the first. Then do the same with successive movies.
Note that you can also share the movies individually then use Quicktime Player to join them together.
