I Know there's a way because my links use to always be blue, but now they're always in black.
(I know I can change manually by selecting the link, going to the brush, and color it that way) but I want to change the default link color for all links for all future documents.

That would essentially be controlled at the Template/Style level and can't be modified in iOS. One of the built-in templates may have a style for this, but I am not personally aware of one.
