I can't remove 5GB of storage in Documents and Data, help!

Hey everyone,

I noticed my 16gb iPad Mini 2 was running out of space so I decided to restore my iPad anew and update to iOS 8.3. After the update, I decided to do restore from my last backup and after that was done finished syncing. iTunes showed me that I had 5gb of data in the documents and data bar and I have no idea where that is coming from. I didn't restore any apps yet and my iMessages account for 1.8GB and my photos are 500mb. Is there any way to figure out where this "documents and data" memory is coming from? Is it possible for me to restore just my iPad settings (stored wifi data and account info etc) and nothing else from a backup?
