reset ipad to factory defaults without a passcode

my son has a ipad mini. he has forgotten the passcode. we tried to restore through itunes. itunes insisted on upgrading to the latest ios as part of the process. part way through the update it asked for the passcode. It can't complete the update without it and it won't let me back into recovery mode. Any ideas please.
