Only if the phone is SIM unlocked. As Apple does not sell the 6 anymore you will be buying a used one. You must make sure that it is SIM unlocked and that it is NOT Activation Locked. As many sellers will lie you are doing something risky by buying a used iPhone.

Another thing that Sprint Roaming plan includes - 2G data. If my objective is not not incur any additional data charges, then I must only "use 2G data". But I don't know how to do that. How do I only use 2G data, not 3G or 4G?
It may be difficult. Most 2G networks are being shut down. And you understand that 2G is slower than dial-up. The only way to find out is after you get to India install a carrier update and see if the option to turn off 3G appears in Settings/Cellular.

If the phone is unlocked, it surely will work worldwide. iPhone 6 are all GSM capable so just make sure the phone is unlocked or if you're getting it locked to one carrier, you've to get it unlocked. Check for AT&T or T-Mobile iPhone 6 which are GSM only as doesn't affect reception after unlocking.
The answer depends on what you mean by "work worldwide". If you are referring to voice calls and SMS text messages, then Yes it is very likely it will work worldwide if unlocked to be used on all carriers. However, the internet connection at higher speeds like 4G and LTE will only work if the local carriers you want to use, are utilising the 4G bands supported by a particular iPhone model and are supported by Apple in the sense that their carrier updates can be installed on that particular model of iPhone. The main difference between the different models of iPhone 6 is precisely the high speed bands supported by each.
I think the advice "if you are using your iPhone in India, buy your iPhone in India" is indeed a very sound one if you want your iPhone to work with all services and to get support for any issues that might arise.
I have an iPhone that I got when I signed up for service with Sprint. I'll be traveling to India for a few weeks, and would like to carry my iPhone with me. once I am there, I'd want to be able to receive/send texts and phone calls to/from USA. My question is - what do I need to do to be able to use the phone as I described and not break the bank with overseas calls?
I've considered just buying a cheap phone once I land in India, but it would have an Indian number, and everyone in the USA who may want to call me wouldn't have that indian number...
CCall Sprint and see what international roaming packages they offer, and if they support WiFi calling. AT&T now has some attractively priced packages; Sprint may also. I've stopped getting local SIMs for short trips, as the convenience of keeping my number is worth the small increase in cost.
Sprint says all they have is a global roaming plan - all texts free (which is great) and voice calls 20c/min (which is pretty expensive).
Any alternatives to keep the voice call cost down? They did say that they can unlock the phone and i can install an Indian SIM once I land there, but if I did that, I am assuming I'll get a new Indian number and would not be able to keep my US number?
20¢ a minute is very inexpensive for roaming calls. It's less that the per-minute price of most Pay-as-you-go SIMS in most countries.
If you change SIMS you will get an Indian number.
