How do I change backround colour without using a coloured box? When I use one I can't type normally or go onto several pages. It really hurts my eyes to be staring at white.

Find another word processor that provides background document color switching. The free LibreOffice Writer allows you to right-click on the document body, choose Page… from the contextual menu, and from the resulting Page panel, choose an area tab to color fill the document body.
Why don't you adjust the brightness of the screen in your System Preferences?
Adding a colored background box and moving it to your Section Master will let you both type normally and go onto several pages.
What have you done? and what versioin of Pages are you using?
