My Apple watch is originally setup in English, but I would like to change the dictation language to Chinese. How do I do that? On iPhone, it changes depends on the language of keyboard user selected, but seems there is not keyboard on Apple Watch, How do I switch around? or at least change the default dictation language.
HHave you tried setting the watch language to Chinese on your phone? Or the Siri language?
not working, it will only change the UI to Chiense, Even Siri is still in English, I found out that you need to change Siri language on your iPhone, but that just for Siri, dictation language is still in English.
Try dictating to a Contact for whom you normally use a Chinese keyboard in the iphone Message app.
This worked. When I reply to someone already replied in Portuguese Dictation assumes Portuguese. Other wise defaults to English. Is his a feature ? It's great
it appears that, like others noticed, it allows dictation in the language which was last used in the conversation, (or english, if the language isn't supported by the watch, such as hebrew)
It would be great if force-tapping on the microphone would allow selecting the dictation language. It's a must have usability feature for multi-lingual users

I had the same problem with dictation in Spanish. I solved it by selecting the Spanish keyboad in the Text Message app of my iPhone with the person I wanted to communicate in Spanish. That person should also must have selected the Spanish keyboard in the iPhone text communication. Once I did that all OK, and even the default replies in my Apple Watch turned into Spanish. You must do the same thing with the Chinese keyboard.

It would be nice if we could set up the language preference of the contact in their profile card. Just like you can tell Siri who is your brother or your wife.
Don't think that should be too hard for Apple to implement.

you can switch language by firm touch and you will see choose language menu pop up.. but it's not work if you try in iMessage app
Dear all - it is actually pretty easy to deal with but not very obvious. Here is how you control this on your watch:
1) When in dictation mode and the "microphone" show, press hard and hold
2) A globe shows
3) Tap lightly on the globe to choose language
4) Done and it works perfectly in the chosen language
