Apr 30, 2015 12:12 PM in response to Tom Geweckeby cj_skywalker,not working, it will only change the UI to Chiense, Even Siri is still in English, I found out that you need to change Siri language on your iPhone, but that just for Siri, dictation language is still in English.

May 25, 2015 2:42 AM in response to cj_skywalkerby Great Wizard,it appears that, like others noticed, it allows dictation in the language which was last used in the conversation, (or english, if the language isn't supported by the watch, such as hebrew)
It would be great if force-tapping on the microphone would allow selecting the dictation language. It's a must have usability feature for multi-lingual users

I solved it by selecting the Spanish keyboad in the Text Message app of my iPhone with the person I wanted to communicate in Spanish. That person should also must have selected the Spanish keyboard in the iPhone text communication. Once I did that all OK, and even the default replies in my Apple Watch turned into Spanish. You must do the same thing with the Chinese keyboard.

Don't think that should be too hard for Apple to implement.

1) When in dictation mode and the "microphone" show, press hard and hold
2) A globe shows
3) Tap lightly on the globe to choose language
4) Done and it works perfectly in the chosen language
