How do you restore iphone to an older backup?

I backed up my phone twice today once at 8:30 pm and again at 9:05 pm but I want to restore to the 8:30 pm one problem is that with this new update it only lets me restore to the newest one which is annoying since the only reason I am restoring is because I accidentally deleted a voice memo which is only present in the 8:30 pm sync please help
