I do not need a countdown timer from a specific day or time, just a simple countdown from when I hit 'play'.
i.e. I open the video file
then click 'play'
and the video would play a timer starting from 5:00 (minutes)
5:00
4:59
4:58
4:57
etc.
Also, does not have to be made in quicktime I just need a video file.

I would like to be able to change it on the fly. I would not want to edit the video and retain each copy.
I think you need to start with a countdown timer app that displays a clock – there are several dozen in the App Store. If you really want a video, you can then use QuickTime Player, 'File > New Screen Recording', to record your clock in operation. Finish it up in iMovie if needed.
