Do you have a retail version of W 8.1?
Yes I do. It had 64 and 32 bit disks and I am trying to install the 64.
Is your USB a USB2 device?
Yes it is a 8Gb USB2.
Can you look at Create an ISO image for Boot Camp from a Windows installation DVD - Apple Support and create a new ISO from you 64-bit DVD and test?
Thanks Loner T for your help you replied to my question incredibly quickly. I did a PRAM reset and tried again and it Installed first try. I have no idea why or even what a PRAM reset is ( this is my first Mac) but it worked.

Windows installation has four or five reboots, and the Apple BootManager tracks such reboots via the Mac NVRAM, otherwise the next reboot will cause OS X to boot rather than Windows. It is also used to set up some variables used to pass information to the CSM-BIOS layer. If an installation has failed, the variables do not reflect the current and clean state of the machine. A NVRAM reset will re-initialize these variables for the next attempt.
