Making A Docking Station W with iPhone

I am seeking to purchase Mac Book Pro and sell my current Mac Pro Tower. However, I am not sure how it will work with iTunes and iPhoto. Both libraries are over 1T. I assume I would have external disk drives for when it's docked.

How will iTunes and iPhoto work when not docked?

Will they try to connect to libraries and return an error?

Is there a good network solution, when not being docked but still at home?

What have people find works the best?
