Had a new hard drive installed on iMac. No back up. How do I transfer my music, audio books on my iPhone to the Mac

You don't. This is why it is critical to backup. You have lost all of that data.
Do you have the original hard drive?
If you purchased the music and books from the Apple iTunes store you can redownload (most of) them again.
