I want to create an Apple ID for my daughter, then transfer my iPhone 5 and all the apps to the new Apple ID.
How do I do this?

You don't. Apps are forever tied the ID they were purcahsed with.
I suggest you setup Family Sharing.

But how about all the other content on the phone (e.g. photos and other data) which my daughter has accumulated since she started using my iPhone5?
Will this remain on the iPhone5 after I've changed the Apple ID on the phone to her Apple ID?
They will remain, but anytime those apps want to update, it will prompt for your ID.
