how can I disable HP updates on my imac?

I've used a recycled print cartridge for my HP psc 2410 for 1 month without problem. Then I received an "incompatible" message. The seller said that I should set my computer so HP can't do auto updates to avoid this problem in the future. How do I do this on an imac running 10.6.8 and how can I fix the problem with this cartrige which has lots of ink left in it?
