I sent an iMessage, it hasn't delivered to recipient yet, is there any way of stopping this message from delivering, blocking them help?

If I block recepient of iMessage before the message is delivered to their phone will this stop it from being delivered?

No it won't. Once you tap on the send button, it is in Apple's server system for delivery and completely beyond your control. It will be delivered the next time the recipient's device connects.
