How do I print left-right facing pages

Using pages I'm used to having a "Facing Pages" checkmark on my document inspector.

On my latest version 5.5.3 it has disappeared or moved to a secret location.

How can I replicate the "Facing Pages" – long side binding capability?

You can't.

Use Pages '09 which should still be in your Applications/iWork folder.

Pages 5.5.3 has lost over 100+ features, is buggy and incompatible except with itself, Yosemite and the iOS8 version.
