i can't see an encrypted restore in the restore menu, but it shows in preferences, Devices with a lock?

i am trying to restore a new phone to the one i had stolen. I know i regularly back up, but when i went to iTunes to restore it is not there. if i look in iTunes, Preferences Devices it is in the list with a lock symbol. how can i get at it!
