WirelessMust be a typo or something like that, since AirPort Disk Utility does not exist.
AirPort Utility does exist and once you open up AirPort Utility, there is a Disk tab to set up a hard drive to allow it to share to the network.
In the example above, there is a drive named 500 GB Drive connected to the USB port on the AirPort Extreme.
AirPort Utility is on your Mac.......Finder > Applications > Utilities > AirPort Utility

Apparently that's an oversight on their part, since it was discontinued ages ago. Probably with Tiger.
In any event its functions are now incorporated in AirPort Utility.

I have managed to mount one drive but for some reason it will not recognise the second - More trial and error needed, I think

WirelessThe USB port on the AirPort is expecting a drive that is formatted in Mac OS Extended (Journaled).....highly recommended......FAT16 or FAT32.
It will not work with a drive that has been formatted for Windows in NTFS or exFAT.
