WI when I first set up my iPad I linked a hotmail account to it which I use for iCloud, App Store, etc for the past few years. I would like to create an @mac or @icloud account instead, and link that, but I can't seem to find how to do it. Any suggestions?

Click here, then click "Manage Your Apple ID".
You should see that you already have such an email address. Look on the "Name, ID and Email Addresses link on the left.

@icloud is automatically created when you use a apple ID.
You have to deactivate your email via iCloud settings and then your apple id will change to a iCloud mail.
