I'm using the current version of Pages and it's not retaining learned words when I reopen documents. Every day I have to tell it to learn certain words, and they're gone the next day with red underlines readded to the document, which is really frustrating. I've tried going into the directory but the online instructions are for Lion and Yosemite doesn't permanently learn any words.
We can guess what you mean by "the current version of Pages" but it would be better if you told us exactly, so we can attempt to recreate the problem.
How are you "learning words"?
To my knowledge Pages no longer has its own Dictionary, it is the System Dictionary.

I'm using pages 5.5.3 and "right" clicking on the word to tell Pages to learn it. It only learns it for as long one session once I shut down and restart it's not kept the word in the dictionary.
I have used the keyboard preferences to add words which has solved the issue, I wasn't able to find the right library directory to add words through the system itself.
