All the content from my Notes app disappeared, I found it in the Trash box, so emailed it to myself, so it's now stored in my Inbox. Is there a way to transfer the content back to Notes?

I'd simply cut and paste from your mail into a new note.
Hold your finger down until you see the popup to select all, copy it, go to the notes app, hold your finger own and paste it into the note.
