What steps have you taken to resolve the issue?

I don't know what Apple's policies are regarding "opening a dispute" but I know in my line of work I'm not allowed to discuss anything with the customer and refer the issue to our legal department. The legal team doesn't do anything either until they receive notice of a court case or notice from an attorney. I'm sure if the EU felt Apple's warranties were unfair they would force Apple to change them or they wouldn't allow Apple products to be sold in the EU. At this point you may not get any response from Apple whatsoever until they hear from an attorney or from the EU Consumer Protection Department.
