On the home screen, swipe up from the bottom of the dock, then in the grey control center tap the circular arrow with a lock in the center (to the right of the six icons shown).

Un-mute? You must be talking about "Do not Disturb" which is located in Control Center (crescent moon).

Rotation Lock and System Sounds both have the controls in the Control Center on the iPad Air2 which no longer has the side switch. The bell icon is the Mute/Un-Mute switch and the Screen Orientation lock is as Ralph described.
they are the last two icons on the right, in the top row, here in this screenshot.
