I read that you can exchange your old iphone for credit in the store. Can i exchange an iphone 6 bought in the US in the UK?

You cannot exchange your old phone for credit in any Apple store. All they do is accept old devices for recycling, and that amount is very low. Suggest if the device is functioning that you sell it outright, since you will get more for it.
