I recently updated my desktop Yosemite system from iPhotos to 'photos.'
It removed all Albums, placing 50 GB of photos into one folder. This is terrifying.
I did have a back up on external drive, one in the previous iPhoto form, and one in the new.
How do I restore either to have the Albums back at any cost?

I have the same problem. The 'upgrade' to Photos seems a backward step to me - unless my update is corrupt. If anyone can illustrate how the new 'Photos' is an improvement on iPhoto I would be very interested to read it.

Do yo have the sidebar open in your Photos library? If not use the View ➙ Show Sidebar menu option to open it. In the sidebar should be your albums and a folder with an album of each of the iPhoto Events that were in the iPhoto Library at the time of conversion.
Moments in Photos are the new Events, i.e. groupings of photos sorted by date taken.
When the iPhoto Library was first migrated to Photos there was a folder created in the sidebar titled iPhoto Events and all migrated iPhoto Events (which are now Moments) are represented by an album in that folder. To open the sidebar if it's not already open use the Option+Command+S key combination.
There's a way to simulate events in Photos.
When new photos are imported into the Photos library go to the Last Import smart album, select all the photos and use the File ➙ New Album menu option or use the key combination Command+N. Name it as desired. It will appear just above the iPhoto Events folder where you can drag it into the iPhoto Events folder
When you click on the iPhoto Events folder you'll get a simulated iPhoto Events window.
The downside to the simulation is that the Albums/Events can only be sorted automatically by Title. But they can also be sorted manually, either in the sidebar or in the folder's window at the right.

The Events aren't seeming to be ordered alphabetically or numerically. Any idea why?
I had spelled Album as Albumn
Photos is entirely different from iPhoto. Those "Events" are only albums in Photo and can be Sorted By Name. Control (right) - click on one of the albums in the sidebar or in the iPhoto Events folder to sort them by name.
Or click on the iPhoto Events folder, go to the View menu and select the "Keep Sorted by Title" option:

I think I am getting the hang of it now and you replies helped considerably.
A shame one no longer seems to be able to lock a geographic location to a photo (very useful for vacations) but I suppose that is trivia really. Must say that I am beginning to like the new system.
