how to delete the photos in a text message in the contact details?

Hope this helps:

1. Go to the conversation you want in the Message App.
2. Put and hold your finger on the picture you want to delete.
3. Select "More..."
4. Now select the messages/pictures you want to delete.
5. In the bottom left corner there is a trash sign: click.
6. "Voila"

While in contact details - tap and hold on photo until menu pop-up. Then tap "Delete". That's it

It isn't clear what you mean - the photo associated with a particular contact or one sent with a specific message?
