How can I add a color for the background in TextEdit AFTER I already started a document?

1) How can I add a color for the background in TextEdit AFTER I already started a document? By default, the page is white. I want beige, creme or whatever. I know how to do it before I start writing but not after I started.

2) Also If I copy a text from somewhere on the Web and paste it (by clicking "Edit-->"paste") the background for this text is white, although the rest of the page is beige. And if I click "Paste and Match Style" it will indeed be pasted on the beige background but it will also eliminate any bold letters, any font that is bigger (as in a title) and others things present in the original document.
