Can I have extended dictation on my iPhone
I would like to be able to dictate to my iPhone for longer than 30 seconds at a time. The dictation works very well but having to stop every 30 seconds is a pain.

Look and see if any of the dictation apps offer off-line dictation. In OS X the enhanced dictation feature allows for longer than short sessions but that is because it does all the processing on the computer. An iPhone or iPad does not yet have the computation power to do that so the Siri 30s limit is because the voice file has to be offloaded to Apple's servers for processing and the results transmitted back to the device.
Dragon dictate in the App Store also does offline processing of your voice file, so I'm not sure if it cuts out as well. My guess would be that offline lengthy dictation on an iPhone would be more error,prone, and would use a lot of power.
