aafter two days wearing her Apple watch my wife has the early stageEs of Nickle allergy. Prior to purchase we enquired from the apple people about Nickle allergy and was informed that no information was available. She loves the watch so we are giving it a few more days before returning it.

You have 14 days to return it. The stainless steel in the watch is the same grade that is used in surgical instruments and hardware surgically placed inside the body, so it should nickel-safe. However, the band may not be the same material. I'd also suggest taking the watch to an Apple store (make an appointment) and see if they can switch the band.
