Will uninstalling itunes reset the encryption password?

Hi All,

I manage a fleet of iPhones and the password for the encryption has been gone from iTunes this machine (mac mini which I inherited) for a long time. Can I uninstall and reinstall itunes (and apple configurator) to set a new encryption password on this machine or do I need to dump the machine completely and reinstall OSX to do it? Thanks!

Mac mini, OS X Yosemite (10.10.3)

I don't think it is a matter of iTunes, it is set on the phones themselves.
