Stolen ipad and email security

I recently had my iPad stolen and am concerned that someone will have access to my email. Obviously the device has a pin, but I'm sure there is a way of getting round that for people who are in the know. My gmail account says that my account was accessed from a different part of the country - however the date of this access was 5 days before I had it stolen?


Anyway if I delete the stolen device from my Apple account will it stop any further emails from my gmail account going to the stolen ipad

Only because the password is stored with the account on the device For ease of use. Now that you've changed that email accounts password, anyone tapping on mail will get a popup saying the account cannot be accessed and they need to enter the password, which they will not know. IOS email does not, in any way, bypass the individual account's passwords and security. Just like your email app on your computer, it caches those things locally so you don't have to re enter them all the time, but it still uses them every single time the email account is accessed.
