Our iPhone 5s has colors all mixed up, green is pink, etc. How do I return to normal?

Try triple-clicking the home button, and if that puts the colours back to normal then change what a triple-click does via Settings > General > Accessibility > Accessibility Shortcut. If it doesn't then try Settings > General > Accessibility > Invert Colours 'off'
