I do appreciate the help, but I keep going around in circles. When I think I found either a solution or something in the interim...it does't work. Right now I can go to a verizon store to get a sim card for my old non-iphone phone so they can activate it for me. Problem is I won't be able to go until tomorrow afternoon!

That makes sense because of the word "all" -- SMS messages go through your cellular provider's message service but iMessages do not. They can't display an iMessage online because it doesn't go through their message service. Even with iMessage turned on you should be able to receive SMS messages online (messages sent from non-Apple devices or Apple devices with iMessage off). If you have someone send you an SMS message and you aren't able to see it online in the way your cellular provider described, I would contact them again. Once you have that working, you should be able to get the confirmation code for de-regestering iMessage the same way since it is an SMS message.
