I understand you are unable to use any audio applications other than the Music App through your car stereo. This may be a limitation of your car stereo and I would recommend reaching out to the vehicle manufacture for more information If your car stereo will allow audio from third party applications, I would go through the troubleshooting steps in the article below.

May 20, 2015 5:28 PM in response to Kathrynoranby iCensored,Every car stereo is different but once you pair your phone to the car it should automatically pick up audio from different apps. If it doesn't it's entirely possible your stereo doesn't support that feature.
With your phone paired pull up the control center, do you see the AirPlay icon to the right of AirDrop? It should give you an option of where to output audio.
