how do I get iTunes to import Aiff files as AAC 256kb

I'm converting old vinyl LPs to digital aiff files, ripping them to CD then adding them to my iTunes (12.1.2.27) library. ITunes doesn't recognize a CD-R, and does not give me the usual import window. I have to go to the file menu, click on "Add to Library..." and then ITunes imports the aiff files; I want them to be compressed using AAC codec at 256kb & VBR. Can't find a way to do this on import, rather I have to import the aiff files and then convert them in iTunes, then delete the aiff files.

How can I streamline this and import directly at 256kb?

You burn to a CD, and rip from an audio format CD.

iTunes does recognize CD-R. If it isn't then there is something wrong with the CDs or the burn or ... Are you burning to audio format? If you are saving these files to a data CD then you aren't even ripping, you are simply copying the files and converting has to be done as a separate step.
